Azteca is not life-changing, but it is a decent option. You can tell a lot of the items are canned, but the produce itself is fresh. The menu has a section called “vegi-mex” with one clearly labeled vegan dish while the others could be modified. The staff usually understand the word “vegan,” but I usually modify it myself to be clear. The Mexican rice has chicken stock, and the refried beans are not vegan. People will forget that chicken stock is not vegan (especially in Mill Creek, where the word vegan barely exists) so be careful.
