Try to find a place open in March Monday evenings in Ajaccio. It will not be easy. Chez Paulo was not only open, they welcomed us warmly. The waitress and the maitre' d were both very nice. We do not speak any French and it was not a problem. Our Sicilian friend's restaurant in San Francisco spoiled us for Pizza but our Four Seasons pizza (vegetarian) was simply delicious. Thin crust and excellent combination of toppings. The chili infused oil was a great addition. We also ordered a local calamari dish. Never had calamari like this but it was so very good. An additional review is hardly needed for this casual restaurant, except for the fact that I had a remarkable chicken brochette here, with large beautifully cubed pieces of quality white meat, succulent and barely cooked, and minimally seasoned, with intervening vegetables thorougly cooked. They served an unusual and flavorful side of thickly sliced fried potatoes, curved like thick potato chips. The brochette was a marked contrast to the small torn salty overseasoned hard dry and often burnt chicken that characterizes all American brochettes.They also serve a traditional corsican cheese cake, fiadone, which was light and not too sweet.
We came along for lunch and had both a pizza a €13,-. The pizza's are off normal quality. You can surtenly go there for the lunch and a glas of wine. Look at the opening houres. The close between lunch and evening.
The cozy and very nice place, fast and professional service. I took a pizza, which, I must say, was not bad, if we valuate that I live in Italy. I didn't like coffee. Excellent value for money
