"The owner is celiac and ALWAYS has GF bread and beer available, and he knows the best way to make a yummy GF toast and sandwich completely separate. Ironically, this is a churrería he runs making churros with gluten so it's not a dedicated kitchen but I've never had a bad experience because he and his workers are all so aware and so cautious. If he knows you're celiac he will be extremely careful. Also, since he's lived in Los Villares for 20+ years, everyone in the town is very aware of gluten free foods and how to cook them safely. Most places have GF bread and beer and they will tell you where cross contamination risks are."

Ironically, this is a chorría that he does with gluten Churros so that it is not a dedicated kitchen, but I never had a bad experience because he and his workers are all so conscious and so cautious.
