Finally good pizzas not flat. The dough is very neat and light, the pizza takes its natural form when cooking with wood fire. pizza dough is not crushed and applatated in these machines that are used to prepare piadines or gullies, these machines that kill all life in the process. There is a very bad habit in the sea alps to use this point of machines, not now here, because the hope of pizzaiolo is not in doubt. we do not improvise baker or pizzaiolo, it is a trade to understand the functioning of levy.
