Whilst there are excellent places to dine on this part of Corsican Coast many are cursed by the need to satisfy the wants of the many Summer tourists. Big colourful pictures of the food on offer (do tourists not read!? and the same 'local ' dishes served over and over again. Everything at L 'Aghjalle is raised on their farm, from the produce to the meat. It is authentic, simple and full of flavour. Service is warm and efficient; we laughed a lot with our waiter who patiently put up with our bastardisation of the French language. Situated on a farm and favored by dramatic views of the surrounding mountains, even before the meal is served, Ferme Auberge L’Aghjalle offers an impressive experience. The menu is small and nearly all ingredients are sourced from their own property and from organic producers in the nearby villages. Although most of the menu’s emphasis is on meat dishes, as is typical in Corsica, there are several really excellent vegetarian options. It would be difficult to hope for a better meal. We ate here on our last night in Corsica and it was the best dining experience of our entire holiday. The hosts were super welcoming and friendly and took the time to explain all the various local dishes and tell us where the ingredients were sourced. The 4 course set menu (very good value at 34€ offered a choice of around 6 dishes for every course and all the dishes we chose were delicious, with lots of locally grown vegetables and fruit. If you like Corsican food rich, hearty, local and full flavoured you will love the cuisine here. Was recommended this restaurant by someone that lives locally and it did not disappoint. As I understand at least 70% of the ingredients have to be locally produced including the wine which was a little stronger than normal French wines. It’s a set menu for €36 and a choice of 3-4 dishes to choose from. Opted for the soup which was very tasty and would have easily served two (maybe three! and then slow cooked veal and pasta.
