From my perspective this is how a top restaurant should be. Great produce, many of which sourced in the region. Well prepared without too many complicating add ons. A great and professional, but also warm service. Notably also here a wonderful head sommelier (Herve Baligand) who is passionate and knowledgeable about wine, but also respects views and thoughts of the guest. And lastly a lovely setting with just enough space between tables. Which also helps as some folks still come with perfume to restaurants of this quality which is a real shame, frankly. And lastly a chef who is present and involved and also walks through the tables at the end of the meals to greet his guests. A worthwhile st...
