They are advertised as being an artisan bread without freezing. I really don't know this information, but this bread is excellent. I haven't tried anything as exquisite as this bread for a while. They also have cakes and other bakery stuff, but I was surprised by the quality. If you have a chance, don't stop trying it. I tried it in the toulouse area.
