Fantastic and well-thought-out kitchen that only falls short of the top level, but that's still good to try. Unfortunately, we felt that there was too much use of the water bath in preparing some of the dishes, making textures less than optimal in e.g. the Guinea-Fowl, but this is the case in many restaurants these days and the food overall was good to very good. Presentation was exceptional. Service top notch. The wine list is a joy and sommelier knowledgeable; to discover many treasures. All in all, a very pleasant experience and quite expensive. One last comment: There were many “before the meal” dishes and many “between”; how many of them were necessary is pathetic.
