Depuis deux ans, je reviens au restaurant de Fabian Feldmann. J'y ai dîné deux soirs. Le premier soir, ce fut le menu découverte. Précisons d'emblée que, contrairement à la plupart des restaurants étoilés, les amuses-bouches sont multiples et variées, formant déjà un ballet de saveurs fort prometteur pour la suite. L'entrée à base de homard est doublement originale, de par la cuisson du crustacé, grillé au feu de bois ce qui permet de garder toute la mâche et le goût au produit. La fraise et le haricot vert forment une alliance étonnante de prime abord mais fonctionnant au final très bien, l'alliance des fruits et légumes avec les fruits de mer étant à l'évidence un témoin de la patte du che...

Le restaurant est petit mais l'accueil est sympathique.Et dès que commence la dégustation,tout est parfait.Le menu découverte avec 4 services est à recommander en particulier le thon en 3 façons et le dessert autour de la pêche.Bon accord mets -vin avec une mention pour le Fitou des Mille Vignes parfait avec le pigeonneau.Un regret pour un service un peu lent et un satisfecit pour l'accueil du petit chien.
