Wow, I just tasted the profiteroles and the Mirabelle couple at La Passerelle, this family restaurant in La Bresse in the Vosges. It was crazy good! Profiteroles, how can I put it... the dough is crispy on the outside but super soft on the inside. They're filled with creamy cream, and there's a layer of chocolate on top with just the right amount of sweetness. Every bite makes you want more! And then the Mirabelle plum pairing, oh my... The Mirabelle plums are fresh, a perfect mix of sweet and sour. It goes really well with the soft cake. The presentation is also super pretty, like a work of art on the plate.
