Tis restaurant is situated right in the centre of Gignac so not difficult to find. Went on a very hot day so the absence of a shady terrace was disappointing.The service s very slow and not well coordinated - we had to wait the best part of 20 minutes before we could get a drink.It is expensive but at lunch time there is a 31 euro 'formule' which offers two courses (entrée and main course or main course and dessert) which we chose.Having been given some amuse bouche which were tasty, we started with a roulade of goat's cheese with courgette (there was no choice) which was beautifully made with an interesting combination of flavours. Looking for new gastronomic experiences around Montpellier, I have been fully delighted by this excellent address I was longing for since years. In addition to lie in one of my favorite places in terms of wines and landscapes in Hérault province, this restaurant provided all I love about gastronomy: local products and cuisine (in 4 to 6 steps) balancing artistically oz of creativity and expression of taste in its pure form. Icing on the cake were the wines suiting pertectly with each dish and featuring a majority of excellent very local and organic wines I love since years. I’ve always admired Matthieu’s food but occasionally felt that it was trying just a little too hard – overcomplicating the presentation or sometimes simply putting one too many ingredients on the plate. Now his fertile imagination and invention seem to have calmed down and found a real maturity. The service and the pace at which food leaves the kitchen have also moved up a notch. There was often a definite – sometimes bordering on tedious - lull between main course and dessert, almost as if early tables couldn’t get pud until late tables had their starters. Now everything seems to flow without rush or delay.I must get back to going regularly!

One of our favourites! We go there every year and enjoy amazing food, great local wines and a lovely atmosphere at a very reasonable price. This is first class quality! Don't miss it!
