I would give this place 5 stars if I could, but happycow does not allow it for places that are not fully vegetarian. The menu has a clearly marked vegetarian section and all items should be vegan, but if it comes with egg, you can ask to omit it. The bibimbap was amazing (just make sure to specify that you want the vegetarian option), but my favorite dish was the mandu (dumplings)!!! Eating them was a truly incredible experience and I feel like a changed person after trying them. Atmosphere wasn’t that of a 5 star dining experience, but you’re not going to Sole Cafe for that. You’re going to Sole Cafe for the amazing, top tier, home cooked Korean food. This restaurant is definitely one of, if not the best, Korean restaurant in the twin cities. Do yourself a favor and stop in for a meal. We met the owners briefly, who happen to be an elderly couple. They’re both extremely kind, very friendly, and love their customers. Please be kind to them, as they’re very good people.
This restaurant is a true hidden gem! The food is incredibly delicious and authentic. It is owned by a delightful elderly Korean couple who are attentive and treat their customers well. Make sure to communicate your spice preferences to them so they can adjust the level accordingly. They frequently checked on us and kept our drinks and sides refilled. A small restaurant, close to 20 per person. The taste is average, just pure spiciness without aroma or layering. And as a service industry, no matter what happens privately, at least you have a good attitude on the surface, right? Are you obviously a little impatient with us, and do you think we don’t understand what Xiba means? I originally wanted to give it two stars. Since we are both Asians, I will add one star for friendship.
The restaurant offers a wide variety of vegetarian dishes that can be easily modified to be vegan. The staff is well-informed about vegan options and accommodated my request to have the scallion pancake made without animal products. Don't forget to specify that you want veg side dishes with your entree. Each dish we tried was flavorful and satisfying, and I definitely plan on returning for more.
We made it clear that we do not eat eggs or fish sauce. The owner/waitress seemed irritated and proudly told us that she doesn't use fish sauce, but then brought out Bibimbap with egg on top and kimchi with fish sauce.
