In the Michelin 1 star category the bandwidth is quite large: One has just made it there, the other already cooks on another level and only has to wait for higher ordinations. I wish the soon ascension to the Waidwerk I was absolutely delighted at my first visit. The dishes are consistently at a very high level and then there are still rippers up. For example, the arrangement of the amuse gueules was already more sophistication than in some complete menu.
