We started our trip in Paris where, of course, we ate well. We continued to the lovely Ariege region, where the restaurants are not ready for prime time. And then we moved on for a night in Le Camargue, before heading back to the States. We stayed at the Mas de Calabrun--ok but nothing to write home about. However! We had dinner in the hotel's restaurant, Le Coursejade, a beautifully arranged space with windows looking out at the pretty grounds.The amuse bouche arrived--a thick whirl of watermelon and grenadine that knocked our socks off--so different, so concentrated, and so fabulous I wanted to lick the inside of the small elegant flute. I must admit, we only ate here first because we stayed at the hotel the restaurant belongs to and didn't want to venture out on our first night. We ended up eating here each night of our four night stay.It turned into a curious ritual. The menu is very limited, each night you can choose between two appetizers, two mains, and two desserts. Each time we read the menu we were kind of underwhelmed so we reluctantly ordered one of each for the two of us and shared. Almost everything we got ended up to be outstanding, and I am a well-seasoned foodie. I wish I had a place like this in Boston...Their fish dishes in particular were excellent. But the highlight was the pea soup with grilled scallops....
In most countries, I wouldn't consider dining at a hotel unless the city was under siege. But this is France, we are in a lovely country hotel, and there is obviously great care all around. While the choices are limited (two of everything), each dish was prepared with great skill and artistry, the ingredients are first rate, and the service is attentive and congenial.The dining room is atmospheric, reflecting love and respect for the Camargue, appropriately informal and homey. We are glad we are staying at this fine hotel and pleased to know the restaurant is as good as we had hoped for.The prices are entirely reasonable for the high standards of quality.
We have stayed in the hotel and have booked for each evening the restaurant . It is a set menu with a choice for each dish . Every dish was just very nice including the desert. Good chef and also good restaurant staff. Very good wine list . We loved it here. To be recommended

Worthwhile a visit. Not exactly inexpensive but food was high quality (which is not always the case in tourist locations) and a modern revisitation of many flavors typical of the mediterraneum regions. Service good and location very pleasant in the countryside.
2 years in a row I came back to the hotel and loved the food at the restaurant. Fine dining with dishes which are worked to an art form. Good selection of wines and great deserts too in a little paradise of a terrace.
Although there is limited choice on the menu, the dishes are original and the menu changes on a daily basis. Also good for a lunch with some BBQ and burgers and salades.
A wonderful set menu with two options for each course. Excellent food. Exceptional wine. Great service and a lovely setting in the countryside of the Camargue.
