While passing through Vannes we discovered this gem of a restaurant! Then heading back to Nantes, we only ordered one dish this Friday evening: pigeon for the gentleman, monkfish for me. The person taking the order warns us that we will have to wait around 40 minutes, so we have an appetizer. Incredible savory bites, fabulous skate and cauliflower appetizer, the tone was set! Cooking the monkfish, pearly to perfection, with buckwheat tartlet, pan-fried shi take and light Jerusalem artichoke puree, all enhanced with a coffee-reduced meat juice, surprising and divine, constitutes the best dish I have ever had. tasted! C is the second time we have lunch in this restaurant. The kitchen is really very good and very well built. I'm not a great specialist, but this chef is not far from the Michelin macaron. A well seasoned kitchen and above all we find the flavors announced. On the other hand, on the service side, it has a bit and we have been frankly cooled by the question of the person who announces the dishes. An excellent time spent in the schedule. Peaceful and warm atmosphere. Careful, professional and discreet service. Seasonal cuisine and refined quantity are more than reasonable.
