We managed to get a table for lunch by a fluke as we have tried many times before. The Colbert doesn't open at night and you have to be a diner to get a drink at lunch times. They also have tables outside. It's clientiele seem to be business people mainly as it is located in a modern day shopping centre in a square with a fountain, parking, a variety of shops, offices, dwellings, the university, mecical centre and home to an open market once a week. The waiting staff whizz around reminiscent of Lyons's nippies (showing my age again) who served us with had our usual croque madames with a choice of salad which was lettuce with a dressing but lots of it, or huge portions of chips.
