For the hungry-on-the-fly, What The Bao brings another hip (and I have to say original) stall to the booming Fremantle market scene. And she is popular, so make your order, grab a number and wait for your food to be made. In Taiwan, Bao means "to hold" which is really descriptive of this Taiwanese food. At first glance, you appear to be served what looks like an overflowing Asian Taco. To the contrary, you get a steamed bun stuffed full of pulled pork, cabbage and smashed peanuts. Or you can opt for other Asian ismatterings like Singaporean soft shell crab, or panko breadcrumbed Japanese chicken, Korean bulgogi or Taiwanese gua. I'm a big fan of trying new things and What the Bao was right in the middle of my not-normal-to-eat zone, but what the heck, everyone was lining up for these Taiwanese treats. "Bao" meaning "to hold" is a Taiwanese dumpling that is treated like a taco in some ways, though it is a steamed dumpling not a soft burito or hard taco shell. But it is stuffed full of really good pulled pork meat, cabbage and smashed peanuts. The accompanying lotus chips are a novelty (great for the kids) and totally tasteless. Mind you most Asian fast food places seem to offer free tasteless chips, so nothing new there. And you can go for a broader range of other fusion foods: bulgogi (Korean); panko crumbed chicken...

I'm an unabashed fan of bao (Chinese bread usually with a filling). Not the closed up or sealed kind you find in dim sum (or dian xin) restaurans, which are sometimes known as yum cha restaurants.I like the open bao where you can see the stuff that's makes up the filling. This stall at the Fremantle Markets (closer to the fresh food section) serves a wide variety of bao. I consider this "food to go, and food for the on the go types". It is quick to eat and healthier than a burger, or so it appears, but yet to be scientifically proven. Much depends on what sort of fillings one chooses. The options on the menu is wide, and the seasonings tasty. A fun one for those who enjoy a different experience, eating at a market, or eating standing up with friends and family.With the small portions, it is more of a "taster" type of meals, or a snack. For those who are used to the portions of foot long subways sandwich would likely need a double order which then makes this meal a pricey one. Book a table now

.....was this the first time I've ever had a bao?! 2nd day in Perth and I was advised to come here and it did not disappoint! Soft shell crab, duck and pork belly!! Alas I did not eat all three as I reluctantly shared with my girlfriend, but I will be back (alone) to have all three for myself!!!Great stuff!!

I had never had a bao before but will definetly again. A lovely light bread style or dumpling style open bun..Hard to describe, as so unusual but delicious..i had a pork belly one and it was devine. Do try if at the Freemantle Market Hall.

We visited the Fremantle Markets on easter weekend and randomly choose to have a brisket Bao. Cooked on the spot, fresh and hot. Took me back to Vietnam. They do provide a small discount if you buy 3 or more.
